Soak beans overnight in water to cover. New day, drain water and add additional 5 c water. Bring to boil and boil 5 minutes. Drain again. Return beans to pot along with 6 c water or to cover. Add carrots, potato, onions, garlic, olive oil and lemon juice. Bring to boil. Reduce heat and simmer, covered, about 45 minutes or until beans are done. Add a little more water if needed, but finished dish should not be soupy. Stir in salt to taste. Cover and chill. Serve cold in flat dish. Garnish with parsley. |
