| INGREDIENTS: | ||
| 1 lb ginger (ground) 450g | 2 lbs brown sugar to taste 900g | 4 limes |
| 1/4 lb rice 100g | ||
| 1 | Grind, grate, or pound ginger. |
| 2 | Add 2 mugs boiling water. |
| 3 | Add rice, lime, and 1 lb brown sugar. Sweeten. Leave for 1 day. |
| 4 | On the following day, sweeten with remaining sugar. Strain. |
| 5 | Bottle and serve. Chill. |
