| INGREDIENTS: | ||
| 1 cup whole wheat flour | 1/2 cup uncooked rooled oats | 1/4 cup sugar |
| 2 teaspoons baking powder | 1/4 teaspoon salt | 1/4 teaspoon ground allspice |
| 2/3 cup skim milk | 2 eggs, slightly beaten | 2 tablespoons vegetable oil |
| 1 teaspoon grated orange peel | 1/4 cup raisins | |
| 1 | In large bowl, combine flour, oats, sugar, baking powder, salt and allspice. Make well in center. In small bowl, combine milk, eggs, oil and orange peel. Pour into flour mixture, stirring just until moistened. Batter will be lumpy. Fold in raisins. |
| 2 | Line 6 microwavable muffin-pan cups with double paper liners. Spoon batter into each cup, filling 1/2 full. Microwava at high (100%) 2 to 4-1/2 minutes or until top springs back when touched. Rotate dish 1/2 turn halfway through cooking. Let stand 5 minutes. Remove from pan. Repeat procedure with remaining batter. |
