Fried Ripe Red Tomatoes

INGREDIENTS:
4 (1-inch-thick) ripe, fresh tomato slices (use a Better Boy or Good Girl) salt and pepper egg wash (2 beaten eggs and 1 cup milk blended well)
1 cup grated Parmesan cheese 1/2 cup gluten flour butter or olive oil for sauteing
juice of 1 lemon



1 Sprinkle the tomatoes with salt and pepper. Dip the tomatoes briefly in the egg wash and coat with the Parmesan cheese. Then dust them lightly with the flour. In a nonstick pan heat the butter or olive oil over medium-high heat, and saute the tomatoes until nice and brown, a few minutes each side. Serve the tomatoes on a plate with a squeeze of fresh lemon juice on top.
