| INGREDIENTS: | ||
| 4 (1-inch-thick) ripe, fresh tomato slices (use a Better Boy or Good Girl) | salt and pepper | egg wash (2 beaten eggs and 1 cup milk blended well) |
| 1 cup grated Parmesan cheese | 1/2 cup gluten flour | butter or olive oil for sauteing |
| juice of 1 lemon | ||
| 1 | Sprinkle the tomatoes with salt and pepper. Dip the tomatoes briefly in the egg wash and coat with the Parmesan cheese. Then dust them lightly with the flour. In a nonstick pan heat the butter or olive oil over medium-high heat, and saute the tomatoes until nice and brown, a few minutes each side. Serve the tomatoes on a plate with a squeeze of fresh lemon juice on top. |
