| INGREDIENTS: | ||
| 1/4 cup butter | 1/2 cup powered sugar | 4 cups coconut, grated |
| 2 egg whites | 1/2 cup powered sugar | pastry for 2 crust 9" pie |
| 1 | Cream butter and sugar. Add coconut. Blend thoroughly. Beat egg whites until foamy. Slowly beat in sugar until meringue forms soft peaks. Fold meringue into coconut mixture. Place in pie shell. Cover with pastry. Bake at 425 for 35 minutes. |
