Preheat oven to 375 degrees. Butter or spray 6 souffle dishes. Coat dishes with parmesan cheese. Whisk milk and yolks together in a bowl. Saute onion and thyme in butter. Whisk in flour for one minute then add milk/yolk mixture, whisk until thin and bubbling; remove from heat. Add goat cheese, cayenne pepper, salt and pepper; whisk until blended smooth. In a separate bowl, whip egg whites until stiff. In two batches to prevent separation, fold egg whites into souffle mixture. Pour into dishes and bake for 18 minutes or until golden brown on top. Serve immediately. |
