Turnip Greens with Bacon

INGREDIENTS:
1/4 cup sliced green onions (2) 4 cloves garlic, minced 1 tablespoon cooking oil
2 cups water 1 cooked smoked pork hock (7 to 8 ounces) 1 tablespoon sugar
1/4 teaspoon salt 1/8 to 1/4 teaspoon cayenne pepper 1 pound turnip greens and/or mustard greens
2 medium turnips, peeled and chopped (2 cups) 3 slices bacon, crisp-cooked, drained, and crumbled red wine vinegar (optional)



1 In a large saucepan, cook and stir green onions and garlic in hot oil over medium heat until onion is tender.
2 Carefully add the water to green onion mixture. Bring to boiling. Stir in pork hock, sugar, salt, and cayenne pepper; reduce heat. Cover and simmer for 45 minutes.
3 Meanwhile, wash turnip greens throughly in cold water; drain well. Discard stems and any damaged portions. Tear up greens. Add greens and turnips to green onion mixture. Simmer, covered, about 20 minutes or until turnips are tender and greens are of desired doneness.
4 Remove pork hock; cool slightly. Remove meat from pork hock; chop meat. Return meat to greens mixture; stir in bacon. Heat through. Serve mixture with a slotted spoon. If desired, sprinkle each serving with a little vinegar.
