For each wonton, place a wonton wrapper on a flat surface with a corner pointing toward you. Spoon 1 rounded teaspoon of the desired filling just below the center of the wrapper. Fold the bottom corner over the filling and tuck it under the filling. Roll up to cover the filling, leaving 1 inch unrolled at the top. Moisten right and left corners of the wrapper with water. Grasp both corners and bring them over filling. Overlap one corner over the other; press firmly to seal. Cover until ready to fry. |

In a heavy 3-quart saucepan or deep-fat fryer, fry wontons, a few at a time, in deep hot oil (365 F) for 1-1/2 to 2 minutes or until golden, turning as needed to brown evenly. Drain on paper towels. |

Keep wontons warm in a 300 F. oven while frying remaining wontons. Serve warm with desired sauce. |
