Curried Apple Chutney

1-1/3 cups 25 minutes Place chutney in an airtight container. Cover and chill for up to 24 hours. Before serving, reheat in a saucepan over low heat until warm.


INGREDIENTS:
1/4 cup packed brown sugar 1/4 cup apple juice or apple cider 4 teaspoons apple brandy
1 tablespoon rice vinegar 1/4 teaspoon grated fresh ginger 1/8 teaspoon curry powder
1-1/2 cups peeled, cored, and chopped tart apples 1/4 cup raisins 2 tablespoons chopped onion



1 In a small saucepan, stir together brown sugar, apple juice, brandy, rice vinegar, ginger, and curry powder. Add apples, raisins, and onion. Bring to boiling; reduce heat. Simmer, covered, for 5 minutes. Uncover and simmer about 5 minutes more or until most of the liquid has evaporated. Serve warm.
