Mustard Crusted Leg of Lamb

INGREDIENTS:
2 tablespoons olive oil 1/2 cup Dijon-style mustard 2 tablespoons soy sauce
1 garlic clove, minced 1/4 teaspoon ground ginger 1/2 teaspoon Tabasco pepper sauce
1 teaspoon dried thyme 1 tablespoon chopped fresh chives 1 6-pound leg of lamb
1/2 cup fine dry bread crumbs



1 In medium bowl, combine the oil, mustard, soy sauce, garlic, ginger, Tabasco sauce, thyme, and chives. Place the lamb on a rack in a roasting pan. Coat the lamb with the mustard mixture, sprinkle it with the bread crumbs, and let it stand for 1 hour.
2 Preheat the oven to 350 F. Roast the lamb for 1-1/2 hours, or until a meat thermometer registers 130 F. for medium-rare or 145 F. for medium.
