Corn Maque Choux

INGREDIENTS:
1 tablespoon butter or margarine 1/2 cup chopped onion 1/2 cup chopped green pepper
4 cups whole-kernel corn (canned, fresh, or frozen, thawed) 1 tomato, cored, seeded, and chopped 1/2 teaspoon Tabasco pepper sauce



1 In a 2-quart saucepan, melt the butter over medium heat. Add the onion and pepper and, stirring frequently, cook for 5 minutes, or until tender. Stir in the corn, tomato, salt, and Tabasco sauce. Reduce the heat and simmer for 10 to 15 minutes, or until the corn is tender.
