| INGREDIENTS: | ||
| 60gm/ 2oz unsalted butter | 115gm/4 oz caster sugar | 1/4 teaspoon grated lemon rind (optional) |
| 1/2 teaspoon vanilla essence | 2 egg whites | 75gm/2/3 oz plain flour |
| 1 | Preheat the oven to 180C/350F/gas mark 4. Grease two baking sheets. Cream the butter and sugar in a small bowl using an electric mixer, until it is light and fluffy, adding the lemon rind and vanilla essence. Beat in the egg whites until the ingredients are just combined. Sift in the flour and stir until smooth. Spoon the mixture into a pipping bag fitted with a plain in 5mm/1/4 in nozzle. |
| 2 | Pipe the mixture onto the baking sheets in thin strips about 6cm/2-1/2 in long, spacing them well apart to allow for spreading. Bake for 5-6 minutes, until they are golden brown around edges. Remove to a wire rack to cool. |
