Bacon-Cheese Biscuits

INGREDIENTS:
1 cup whole wheat flour, plus 1/4 cup as needed and a little extra for rolling 1 cup soy flour 1/2 cup wheat bran
1/2 cup grated Parmesan cheese 1/4 cup unsweetened applesauce 3/4 cup water
1 egg 1/4 cup (about six slices) cooked, drained, crumbled bacon



1 Preheat the oven to 350 F.
2 In a large bowl, combine the flours, wheat bran, and cheese. Add the applesauce, water, egg, and bacon. Stir into a dough. If the dough is very sticky, knead in an additional 1/4 cup of flour.
3 Turn the dough out onto a floured surface and, with a floured (or non-stick) rolling pin, roll to 1/4-inch thickness. Cut into shapes with cookie cutters. Place biscuits on a baking sheet and bake for 20 minutes or until brown. Store in an airtight container in the refrigerator.
