| INGREDIENTS: | ||
| 1 cup whole wheat flour, plus 1/4 cup as needed and a little extra for rolling | 1 cup soy flour | 1/2 cup wheat bran |
| 1/2 cup grated Parmesan cheese | 1/4 cup unsweetened applesauce | 3/4 cup water |
| 1 egg | 1/4 cup (about six slices) cooked, drained, crumbled bacon | |
| 1 | Preheat the oven to 350 F. |
| 2 | In a large bowl, combine the flours, wheat bran, and cheese. Add the applesauce, water, egg, and bacon. Stir into a dough. If the dough is very sticky, knead in an additional 1/4 cup of flour. |
| 3 | Turn the dough out onto a floured surface and, with a floured (or non-stick) rolling pin, roll to 1/4-inch thickness. Cut into shapes with cookie cutters. Place biscuits on a baking sheet and bake for 20 minutes or until brown. Store in an airtight container in the refrigerator. |
