| 1 pound (2 cups) beef or chicken livers | 1 cup tapioca flour or starch | |
| 1 | Preheat the oven to 250 F. |
| 2 | Puree the liver in a food processor. Add the tapioca flour or starch and mix well. Line a baking sheet with foil and lightly grease it (or use non-stick foil). Pour the mixture onto the baking sheet and bake for 70 minutes or until firm on top and uniformly brown on the bottom. Place baking sheet on cooling rack and let sit until cool enough to handle. Peel off the foil and cut into small pieces with a pizza cutter. Store in an airtight container in the refrigerator. |
