Liver Birthday Torte

INGREDIENTS:
1/2 cup whole wheat flour 1/2 cup rye flour 1/2 cup wheat or oat bran
1 recipe Simple Liver Puree 2 medium carrots or 10 baby carrots 1/2 cup applesauce
1/4 cup olive oil 1 egg 2 cloves garlic (or 1 teaspoon pre-chopped garlic)
FOR FROSTING: 1/2 cup soft cream cheese 1-1/2 tablespoons olive or safflower oil



1 Preheat the oven to 350 F. Grease 9-inch round cake pan.
2 In a large bowl, combine the flours and bran. Make the Simple Liver Puree. Reserve 1/4 cup of the puree. Empty the rest into the bowl with the dry ingredients. Add the carrots to the food processor (don't bother to wash the processor if you've just used it for the puree). Process until finely chopped. Add the applesauce, olive oil, egg, and garlic. Mix together thoroughly. Add this liquid mixture to the flours and liver in the bowl. Mix thoroughly with a spoon. Spoon into the cake pan. Bake for 25 to 30 minutes. Cool on a wire rack. Frost right before serving.
3 FOR FROSTING: Combine the 1/2 cup soft cream cheese with the 1/4 cup reserved liver puree. Add the 1-1/2 tablespoons of olive or safflower oil and mix until smooth. Frost the top of the layer only. Decorate with candles, dog treats, or whatever strikes your fancy. Cut into slices and serve. Store leftovers in the refrigerator in an airtight container.
