Bacon Cheese Muffins

INGREDIENTS:
1 cup all-purpose flour 1 cup whole wheat flour 1 tablespoon baking powder
1/4 teaspoon salt 1 egg 1 cup milk
1/4 cup honey or molasses 3 tablespoons oil 3/4 cup cheddar cheese, shredded
1/4 cup cooked bacon (six slices), drained and crumbled



1 Preheat the oven to 400 F. Line the cups of a mini-muffin tin with paper cups or spray them with oil.
2 In a large bowl, mix together flours, baking powder, and salt. Make a well in the middle of this dry mixture. In a small bowl, beat the egg with a fork. Add milk, honey or molasses, and oil and stir together. Pour the wet ingredients into the well in the dry ingredients and fold in, stirring until just combined. Gently stir in cheese and bacon. Spoon the mixture into the mini-muffin pan, filling each cup about 3/4 full. Bake for 15 minutes (25 minutes for regular-sized muffins) or until the tops are brown and toothpick inserted into center comes out clean. Store in the refrigerator in an airtight container.
