Empty can(s) of salmon (liquid, bones, and all) into a food processor. Add cottage cheese and process well, until mixture is a mousse-like consistency. Add flour and cheddar and mix into a sticky, loose dough. Grease the bottom and sides of an 8x8 or 12x0-inch baking pan. (You'll get thicker blondies with the smaller pan.) Turn dough out into the greased pan and push to the edges of the pan with wet hands or a spatula. Sprinkle with Parmesan cheese. Bake for 35 to 40 minutes or until golden brown. Cool in the pan and then cut into the desired size. Store in the refrigerator in an airtight container. |
