| 2 cups whole wheat flour | 1-1/2 cups cornmeal | 1/2 cup oat or wheat bran |
| 1/2 teaspoon baking powder | 1/2 teaspoon cinnamon | 1/2 teaspoon nutmeg |
| 1 egg, beaten | 2/3 cup honey | 1 cup applesauce |
| 1-1/3 cup water | extra oat bran or rolled oats (optional) | |
| 1 | Preheat the oven to 350 F. Line the cups of a muffin tin with paper cups or spray them with oil. |
| 2 | In a large bowl, mix the dry ingredients together thoroughly. In a medium bowl, whisk together wet ingredients. Gently fold wet ingredients into dry ingredients until just combined. Spoon batter into cups, filling to 2/3 full. Sprinkle with oat bran or rolled oats, if desired. Bake for 30 minutes for mini muffins or 40 minutes for regular-sized muffins, or until golden brown. Store at room temperature in an airtight container for up to three days. |
