Apple Bran Muffins

INGREDIENTS:
2 cups whole wheat flour 1-1/2 cups cornmeal 1/2 cup oat or wheat bran
1/2 teaspoon baking powder 1/2 teaspoon cinnamon 1/2 teaspoon nutmeg
1 egg, beaten 2/3 cup honey 1 cup applesauce
1-1/3 cup water extra oat bran or rolled oats (optional)



1 Preheat the oven to 350 F. Line the cups of a muffin tin with paper cups or spray them with oil.
2 In a large bowl, mix the dry ingredients together thoroughly. In a medium bowl, whisk together wet ingredients. Gently fold wet ingredients into dry ingredients until just combined. Spoon batter into cups, filling to 2/3 full. Sprinkle with oat bran or rolled oats, if desired. Bake for 30 minutes for mini muffins or 40 minutes for regular-sized muffins, or until golden brown. Store at room temperature in an airtight container for up to three days.
