| INGREDIENTS: | ||
| 1 pound (2 cups) beef liver | 3 eggs | 1/2 cup canned pumpkin |
| 1/2 cup non-fat ricotta cheese | 1/4 cup olive oil | 1 cup whole wheat flour |
| 1 cup rye flour | 1/2 cup white bean flour | 1/4 cup flax seed meal |
| 1 | Preheat the oven to 400 F. |
| 2 | Puree the beef liver in the food processor. Add eggs and blend. Add pumpkin, ricotta, and olive oil and blend until thoroughly mixed. In a large bowl, combine flours and flax seed meal. Add the liquid mixture to the dry mixture and stir with a spoon into a sticky dough. Turn out onto a baking sheet covered with grease or non-stick foil. use a spoon, spatula, or your hands to push the dough to the edges of the baking sheet. Bake for 20 minutes or until the tops are firm and bottoms are browned. |
| 3 | Allow the treats to cool on the baking sheet. When cool enough to handle, turn the dough over, peel off the foil and cut into small treats. Store in the refrigerator in an airtight container. |
