Chicken-Tomato Biscuits

INGREDIENTS:
1-1/4 cups rye flour, plus extra for rolling 1 cup whole wheat flour 1 cup white bean flour
1/4 cup flax seed meal 1/2 cup tomato juice 1/2 cup chicken broth
1 egg, beaten 1/4 cup grated Parmesan cheese



1 Preheat the oven to 375 F.
2 Combine the flours and flax seed meal in a large bowl. Add the juice, broth, and egg. Stir together and knead until dough is formed. If necessary, knead in a little extra flour so that the dough is easy to roll out without sticking. Turn out onto a floured surface and sprinkle flour on top of the dough. Roll to 1/2-inch thickness. Sprinkle with Parmesan cheese. Cut into shapes with cookie cutters and place on an ungreased baking sheet. Bake for 20 minutes or until the tops are brown. Store in the refrigerator in an airtight container.
