Poached Summer Fruit

INGREDIENTS:
1 cup orange juice 1 cup sugar julienne peel of one lemon
juice of one lemon 1 pound small plums, pitted and quartered 1 can (16 ounces) peach halves, drained
1 can (17 ounces) unpeeled apricot halves, drained sprigs of mint



1 In a saucepan, combine the orange juice, sugar, lemon peel and juice. Cook at a full rolling boil until it becomes a thick syrup. Reduce the heat, add the plums and simmer for 5 minutes. Add the peaches and apricots and simmer for 2 additional minutes. With a slotted spoon, place the fruit in a serving bowl. Bring the syrup to a boil again and remove it from the heat. Add the mint to the syrup and pour over the fruit. Chill.
