| 1-1/2 cups oat flour | 1 cup oat bran | 1 cup rolled oats |
| 2 teaspoons cinnamon | 2 teaspoons baking soda | 1 egg, whisked |
| 1/3 cup honey | 3 tablespoons sunflower oil | 3/4 cup skim or nonfat milk |
| 1 | Preheat the oven to 425 F. Spray a 12-muffin pan with nonstick spray. |
| 2 | In a large bowl, mix the flour, brean, oats, cinnamon, and baking soda. |
| 3 | In a separate bowl, blend the egg, honey, and oil. |
| 4 | Add the milk to the bowl with the dry ingredients and then add the egg, honey, and oil mix. Stir well. |
| 5 | Spoon into the muffin pan, filling the cups three-quarters full. |
| 6 | Bake for 15 to 20 minutes. |
| 7 | Cool before serving. Store extras in resealable plastic bags in the freezer. |
