Must-Have Muffins

INGREDIENTS:
1-1/2 cups oat flour 1 cup oat bran 1 cup rolled oats
2 teaspoons cinnamon 2 teaspoons baking soda 1 egg, whisked
1/3 cup honey 3 tablespoons sunflower oil 3/4 cup skim or nonfat milk



1 Preheat the oven to 425 F. Spray a 12-muffin pan with nonstick spray.
2 In a large bowl, mix the flour, brean, oats, cinnamon, and baking soda.
3 In a separate bowl, blend the egg, honey, and oil.
4 Add the milk to the bowl with the dry ingredients and then add the egg, honey, and oil mix. Stir well.
5 Spoon into the muffin pan, filling the cups three-quarters full.
6 Bake for 15 to 20 minutes.
7 Cool before serving. Store extras in resealable plastic bags in the freezer.
