North African Orange Salad

INGREDIENTS:
2 cups lettuce, shredded 1 large onion, peeled and sliced thin 8 Greek olives, pitted and sliced
2 large oranges, peeled and sliced thin 2 tablespoons olive oil 2 tablespoons lemon juice
1/8 teaspoon salt 1/8 teaspoon pepper



1 Using a salad fork and spoon, or two dinner forks, mix the lettuce, onions, and olives together in a salad bowl. Arrange orange slices on top. Mix oil, lemon juice, salt, and pepper together in a small bowl to make a salad dressing. Pour dresssing over salad. Refrigerate.
