| INGREDIENTS: | ||
| 1 cup spelt berries | 1/2 teaspoon salt | 2 tablespoons evaporated cane sugar |
| 1/4 cup honey | 1/3 cup poppy seeds, ground in a spice grinder or blender | 1/2 cup raisins, soaked in water 5 minutes to plump |
| 1/2 cup walnuts, toasted and finely chopped | ||
| 1 | Soak the spelt berries overnight in a medium pot with 6 cups water. In the morning, place on the heat, cover, and bring to a boil. Lower the heat and simmer, partially covered, until most of the berries are tender and splitting open, about 2 to 3 hours. Check from time to time and add more water if necessary, making sure there is always water in the pot. When the berries are cooked, stir in the salt and let sit for 10 minutes. Drain the excess water and let cool. |
| 2 | Place 2 tablespoons water in a small pot along with the sugar. Bring to a boil, stirring, just to dissolve the sugar. Remove from the heat and stir in the honey and poppy seeds. Stir this mixture into the spelt berries along with the raisins. Let cool to room temperature. Stir in the walnuts right before serving. Serve a small amount to start the meal. |
