INGREDIENTS:
2 quarts lager-style beer 5 ounces Simple Syrup 3 ounces freshly squeezed lemon juice
1 teaspoon freshly grated nutmeg 1 teaspoon freshly grated ginger 1 quart dark rum
apple and lemon slices for garnish



1 Add beer, simple syrup, lemon juice, nutmeg and ginger to a medium-size nonreactive saucepan. Heat mixture over medium-high heat until hot, 8 to 10 minutes. Do not let it come to a boil. Add rum to saucepan and stir well. Add apple and lemon slices to a heatproof punch bowl. Pour hot mixture into punch bowl. Stir 3 times. Ladle into mugs.
2 SIMPLE SYRUP: Combine 2-1/2 cups water and 3 cups sugar in a medium saucepan. Heat to boiling, stirring occasionally, over medium high heat. Reduce heat, keeping mixture at a low boil for 5 minutes, stirring occasionally. Turn off heat and let cool completely in pan. Store in a clean, airtight container in the refrigerator. Makes 4-1/2 cups.
