| INGREDIENTS: | ||
| 4 small heads crisp lettuce | 1/4 cup minced onion | 4 tablespoons butter |
| heavy cream | celery salt | 4 poached eggs |

| 1 | Shred lettuce. Cook onion in butter for 5 minutes over low heat. Add lettuce and cook 10 minutes stirring frequently. There should be about 4 cups of the lettuce-onion mixture. |
| 2 | Add enough cream to moisten lettuce and simmer until tender. Season lightly with celery salt. Cook away all moisture. Arrange on hot vegetable dish and place 4 trimmed poached eggs on top. Dust with paprika. Sorrel or spinach may be substituted for lettuce. For a vegetable to accompany meat or fish, omit eggs. |
