Braised Lettuce

INGREDIENTS:
4 small heads crisp lettuce 1/4 cup minced onion 4 tablespoons butter
heavy cream celery salt 4 poached eggs
paprika



1 Shred lettuce. Cook onion in butter for 5 minutes over low heat. Add lettuce and cook 10 minutes stirring frequently. There should be about 4 cups of the lettuce-onion mixture.
2 Add enough cream to moisten lettuce and simmer until tender. Season lightly with celery salt. Cook away all moisture. Arrange on hot vegetable dish and place 4 trimmed poached eggs on top. Dust with paprika. Sorrel or spinach may be substituted for lettuce. For a vegetable to accompany meat or fish, omit eggs.
