Soft Corn Bread

INGREDIENTS:
3/4 cup corn meal 1/4 cup sifted flour 1/2 tablespoon sugar
1/2 teaspoon salt 1 teaspoon baking powder 1-1/2 cups plus 1 tablespoon milk
1 egg, lightly beaten 2 tablespoons butter, melted



1 Combine dry ingredients. Stir in 1 cup plus 1 tablespoon milk. Stir in egg. Put butter in 9 inch baking pan in oven; when butter is hot pour batter into pan. Pour remaining 1/2 cup milk over top and do not stir it in. Bake in preheated oven at 400 F. for 30 minutes.
