Rum-Sauced Bananas

INGREDIENTS:
1/4 cup apple juice 4 teaspoons brown sugar 1 teaspoon margarine
dash ground nutmeg 2 large bananas, peeled and sliced (1-3/4 cups) 1 tablespoon rum
1 cup coffee-flavored ice cream or ice milk



1 In a 1-quart microwave-safe casserole combine apple juice, brown sugar, margarine, and nutmeg. Micro-cook, uncovered, on 100% power (high) for 1 minute. Add bananas, tossing to coat. Cook on 100% power (high) for 1 to 2 minutes or until bananas are heated through; spoon sauce over bananas once.
2 Pour rum over bananas in casserole. Carefully ignite with a long match. Serve banana mixture over light ice cream.
