Baked Leek Croquettes

INGREDIENTS:
4 leek stalks, leaves removed, cut in 1-inch slices 2 medium potatoes, peeled, quartered 4 large eggs
salt and pepper to taste 1 lemon, sliced



1 Boil the leeks and potatoes in salted water until tender. When cool, drain well and add the vegetables to a food processor. Stir in the eggs and seasonings. Shape into conical croquettes. (The eggs will hold the shape of the croquettes.)
2 Traditionally, Leek Patties are fried, but baking greatly reduces the fat calories. Bake on a sheet lightly coated with cooking spray at 350 degrees for 30 minutes, or microwave on high for 3-4 minutes. Serve warm with lemon slices.
