Orange Cake (Portakalli Kek)

1 lb loaf cake 20 minutes 1 hour


INGREDIENTS:
1/2 cup margarine generous 1/2 cup sugar 1 Tbsp plain yogurt
2 eggs 1-1/4 cups self-rising flour 1 tsp baking soda
1 tsp shredded orange rind 1 Tbsp orange juice candied peel or orange slices, to decorate



1 Preheat a 180 F oven and grease a 1-pound loaf pan. Blend the margarine and sugar together until light. Add the yogurt.
2 Beat the eggs in a separate bowl with a little of the flour. Sift the rest of the flour with the baking soda and mix all the ingredients together.
3 Gradually add the eggs to the margarine mixture, stirring constantly. When mixed, add the flour. Finally add the orange zest.
4 Transfer the mixture to the loaf pan and bake in the oven for 1 hour. Transfer the cake to a wire rack and, while still hot, make a few skewer holes, and pour the orange juice over. Decorate with candied peel or orange slices.
