| INGREDIENTS: | ||
| scant 3/4 cup short-grain rice | 2/3 cup sugar | a few saffron strands |
| 1 Tbsp arrowroot | 1 Tbsp currants | 1 Tbsp chopped mixed nuts, to decorate |
| seeds of 1 pomegranate, to decorate | ||
| 1 | Wash the rice and place in 5 cups water with the sugar. Bring to a boil and simmer for 20 minutes. |
| 2 | Soak the saffron in a little warm water, then add to the rice. Dissolve the arrowroot to a smooth paste in a little cold water, then add to the rice with the currants. Mix well and simmer over medium heat for 20 minutes until thickened. |
| 3 | Divide the mixture among individual bowls and leave to cool. Sprinkle with chopped nuts and pomegranate seeds, and serve. |
