Sweet Rice (Zerde)

INGREDIENTS:
scant 3/4 cup short-grain rice 2/3 cup sugar a few saffron strands
1 Tbsp arrowroot 1 Tbsp currants 1 Tbsp chopped mixed nuts, to decorate
seeds of 1 pomegranate, to decorate



1 Wash the rice and place in 5 cups water with the sugar. Bring to a boil and simmer for 20 minutes.
2 Soak the saffron in a little warm water, then add to the rice. Dissolve the arrowroot to a smooth paste in a little cold water, then add to the rice with the currants. Mix well and simmer over medium heat for 20 minutes until thickened.
3 Divide the mixture among individual bowls and leave to cool. Sprinkle with chopped nuts and pomegranate seeds, and serve.
