Sweet Fritters (Bunuelos)

INGREDIENTS:
1 cup water 8 ounces sweet butter 1/2 teaspoon salt
1 cup sifted flour 5 eggs 2 cups vegetable or corn oil
sugar for coating



1 In a deep saucepan, boil water, butter and salt. Stir in flour and mix in one direction until mixture pulls away from the sides of the pan and forms a solid mass. Turn off heat and stir in eggs one after the other.
2 Heat oil in a deep frying pan. Drop the mixture 1/2 teaspoon at a time into the pan and fry until brown. Drain on paper towel and roll in sugar.
