INGREDIENTS:
4 quarts water 4-1/2 pounds beef bones 2 tablespoons sliced ginger root
2 pieces star anise pinch of salt and pepper



1 Combine all ingredients, bring to a boil and simmer for 3 hours. Strain and set aside. Once cool, remove solid fat residue off the top.
