| INGREDIENTS: | ||
| 1 kg/2-1/4 lb small spare ribs | 12 red dates | 1 tbsp black beans, soaked in hot water for 10 minutes |
| 2 tsp rock sugar or granulated sugar | 2 tbsp light soy sauce | 2 tbsp vegetable or peanut oil |
| 1 tbsp cornflour (cornstarch) | ||
| 1 | Easy to prepare and delicious to eat, these subtly flavoured ribs are a healthy alternative to the marinated and sticky deep-fried versions common in Chinese restaurants. |
| 2 | Place the ribs and dates in a heatproof dish. Drain the black beans and gently press and mix them with the remaining ingredients, adding a tablespoon of water. |
| 3 | Por the sauce over the ribs and dates. Cover the dish with foil and place in a preheat steamer; steam vigorously for 1 hour. |
