Pork Spare Ribs with Black Beans

INGREDIENTS:
1 kg/2-1/4 lb small spare ribs 12 red dates 1 tbsp black beans, soaked in hot water for 10 minutes
2 tsp rock sugar or granulated sugar 2 tbsp light soy sauce 2 tbsp vegetable or peanut oil
1 tbsp cornflour (cornstarch)



1 Easy to prepare and delicious to eat, these subtly flavoured ribs are a healthy alternative to the marinated and sticky deep-fried versions common in Chinese restaurants.
2 Place the ribs and dates in a heatproof dish. Drain the black beans and gently press and mix them with the remaining ingredients, adding a tablespoon of water.
3 Por the sauce over the ribs and dates. Cover the dish with foil and place in a preheat steamer; steam vigorously for 1 hour.
