My Mother's Chicken Stew

INGREDIENTS:
3 pounds chicken, cut into pieces 1 teaspoon salt 1 teaspoon tarragon
pepper, to taste 1/4 cup olive oil 1-1/2 cups diced onions
1/2 cup boiling water 2 cups tomato sauce



1 Sprinkle chicken pieces with salt, tarragon, and pepper. Set aside.
2 Put olive oil in a heavy skillet and heat. When oil is hot, carefully place chicken pieces in oil and brown on all sides. Add onions and continue cooking until onions are tender and light brown. Add water and cover.
3 Simmer for about 15 minutes and then add tomato sauce, simmering for another 15 to 20 minutes, until chicken is tender.
