Fritter Batter

INGREDIENTS:
1-1/2 cups all-purpose flour 1 teaspoon salt 1 teaspoon white pepper
1 teaspoon ground ginger 1 tablespoon safflower oil 2 egg yolks, beaten
3/4 cup beer, at room temperature



1 Blend in a mixing bowl the flour, salt, pepper, ginger, oil, and egg yolks. Add the beer, stirring constantly. Refrigerate the batter for at least 3 hours before using. I like to add a beaten egg white or two and fold this in at the last minute.
