| 1 | Wash the spinach leaves well in several changes of water and remove tougher stems and ribs. Bring a large pot of water to a fast boil, plunge the spinach into the boiling water, cook for 3-6 minutes, depending on how young it is, and drain it in a colander. Leave the cooked spinach whole or chop it, toss it with melted butter, season with salt and pepper, and serve at once. |
