| INGREDIENTS: | ||
| leftover turkey carcass and meat | 9 cups water | 1/4 cup chopped onion |
| 2 small carrots, chopped | 1 bay leaf | pinch of parsley |
| salt and pepper to taste | 1/2 tsp thyme | 4 cups cooked wild rice |
| 1 | Break apart carcass. Place in pot with water, bring to boil, add remaining ingredients (except for wild rice). Reduce heat and simmer for approzimately 2 hours. |
| 2 | Remove carcass, stripping off any remaining meat to put back into soup. Skim off any excess fat. Add wild rice. Simmer for an additional 20 minutes. ANy leftover soup may be frozen. |
