| INGREDIENTS: | ||
| 1/2 cup peanut oil | 6 large brown onions, coarsely chopped | 1 teaspoon thyme |
| 3 bay leaves | 1 bottle dry red wine | 10 cups beef consomme' |
| 8 slices stale French bread | 1-1/2 pounds Swiss cheese, grated | |
| 1 | Heat oil in large pot. Add onions and saute until cooked but not brown. Add thyme and bay leaves. Stir in wine. Bring to boil and let soup reduce for a few minutes. Add consomme' and cook uncovered for 20 minutes. |
| 2 | Pour soup into 8 large ovenproof soup bowls. Top each with slice of French bread. Sprinkle with cheese. Broil quickly until bubbling and golden. Serve at once. |
