La Cuisine Soupe a L'Oignon Gratinee

INGREDIENTS:
1/2 cup peanut oil 6 large brown onions, coarsely chopped 1 teaspoon thyme
3 bay leaves 1 bottle dry red wine 10 cups beef consomme'
8 slices stale French bread 1-1/2 pounds Swiss cheese, grated



1 Heat oil in large pot. Add onions and saute until cooked but not brown. Add thyme and bay leaves. Stir in wine. Bring to boil and let soup reduce for a few minutes. Add consomme' and cook uncovered for 20 minutes.
2 Pour soup into 8 large ovenproof soup bowls. Top each with slice of French bread. Sprinkle with cheese. Broil quickly until bubbling and golden. Serve at once.
