| 18 slices stale bread | 2 cups milk | 2 egg yolks |
| 1/3 cup sugar | 3 ounces raisins | 3 ounces candied orange peel |
| 1/2 cup brandy | 2 teaspoons cinnamon | 2 egg whites, stiffly beaten |
| 1 tablespoon butter | ||
| 1 | Soften the bread in warm milk and mash it fine. Add the egg yolks, sugar, raisins, candied orange peel, brandy, and cinnamon. Mix well. Fold in 2 beaten egg whites. Pour into a buttered ovenproof dish, dot with butter, and let rise in a moderate oven (325 F.) for 1/2 hour. |
