Bread Dish with Raisins (Broodschoteltje met rozijnen)

INGREDIENTS:
18 slices stale bread 2 cups milk 2 egg yolks
1/3 cup sugar 3 ounces raisins 3 ounces candied orange peel
1/2 cup brandy 2 teaspoons cinnamon 2 egg whites, stiffly beaten
1 tablespoon butter



1 Soften the bread in warm milk and mash it fine. Add the egg yolks, sugar, raisins, candied orange peel, brandy, and cinnamon. Mix well. Fold in 2 beaten egg whites. Pour into a buttered ovenproof dish, dot with butter, and let rise in a moderate oven (325 F.) for 1/2 hour.
