| INGREDIENTS: | ||
| 3 lbs elk | 2 tbsp bacon fat | 2 onions, chopped |
| 2 cloves garlic, minced | 1 quart water | 1 tsp salt |
| 1/4 tsp pepper | 1/2 tsp oregano | 5 potatoes, cubed |
| 6 carrots, sliced | 1-1/2 cup celery, chopped | 1/2 lb mushrooms, sliced |
| 1 | Cut elk into 1-inch cubes, brown fat and remove meat to plate. Saute onions and garlic in fat until translucent. Add water, salt, pepper, oregano and meat and cook 2-1/2 hours until venison is tender. Add vegetables and cook until vegetables are done. |
