Savory Stew of Elk

INGREDIENTS:
3 lbs elk 2 tbsp bacon fat 2 onions, chopped
2 cloves garlic, minced 1 quart water 1 tsp salt
1/4 tsp pepper 1/2 tsp oregano 5 potatoes, cubed
6 carrots, sliced 1-1/2 cup celery, chopped 1/2 lb mushrooms, sliced



1 Cut elk into 1-inch cubes, brown fat and remove meat to plate. Saute onions and garlic in fat until translucent. Add water, salt, pepper, oregano and meat and cook 2-1/2 hours until venison is tender. Add vegetables and cook until vegetables are done.
