Chicken Livers Simmered in Madiera Sauce (Watrobka Kurza Duszona w Sosie Madejra)

INGREDIENTS:
1 pound chicken livers 1 cup milk 1 onion, chopped fine
1/4 cup butter 1/2 cup flour 1 cup chicken broth
1/2 cup Madeira wine salt and pepper to taste parsley (optional)



1 Soak livers in milk overnight. (Cats will love the discarded milk in the morning.) Gently saute the onion until translucent. Flour the chicken livers heavily and lightly brown in the onion and butter. Turn the heat to low, add the broth and wine and simmer for 20 minutes. Correct seasonings and garnish with parsley, if desired.
