Oklahoma Hunter's Stew

INGREDIENTS:
1-1/2 lbs beef stew meat, cut into 1-inch cubes 1/2 cup chopped onion 1 lb can tomatoes (about 2 cups)
1-1/2 cups water 2 tsp salt 1/4 tsp pepper
1/4 tsp chili powder 1 bay leaf 2 pkgs (10-oz each) frozen mixed vegetables (lima beans, corn, peas, carrots)
1/2 cup sliced celery 1/2 cup uncooked macaroni pieces 4-oz can mushroom pieces (optional)



1 Combine meat, onion, tomatoes, water, salt, pepper, chili powder, and bay leaf in a large skillet or saucepan. Cover with tight-fitting lid and simmer 1 to 1-1/4 hours, until meat is just tender. Add mixed vegetables and celery; continue cooking 15 minutes. stir in macaroni and mushrooms. Cover and simmer about 15 minutes longer until macaroni is done. Total time will be 1-1/2 to 1-3/4 hours. If it is necessary to thicken broth, stir into stew 1 tbsp cornstarch mixed with 2 tbsp water. Cook and stir over low heat until broth is clear and thickened.
