Place beef in Dutch oven. Sprinkle with salt and pepper. Cover with onion, green pepper, chili sauce, and water. Cover withtight-fitting lid and bake in moderate oven (350 F.) 1 hour. Stir in lima beans, which have stood at room temperature while the beef cooks. Cover and return to oven for about 45 minutes, or until meat and beans are tender. Remove stew from oven. To thicken, mix flour with 1/3 cup water; stir into the stew and simmer 5 to 10 minutes. Serve stew with cornbread muffins or squares. |
