Edmond Italian Style Meat Balls

INGREDIENTS:
1 lb ground beef 2 to 3 tbsp salad oil 1/2 cup finely chopped onion
1/2 clove garlic, chopped fine 1 egg 1/2 cup fine dry bread crumbs
2 tbsp Parmesan cheese 1 tsp salt 1/8 tsp pepper
6 oz can tomato paste 1 cup canned tomatoes 1-1/2 cups water
1 bay leaf 1/2 tsp leaf oregano 1/4 tsp leaf basil



1 Fry onion and garlic in 1 tbsp salad oil in a skillet until lightly browned. Combine with ground beef and egg in a bowl. Add bread crumbs, cheese, salt, and pepper. Mix well. Shape into 1-in balls (35 to 36). Brown lightly in 1 to 2 tbsp oil in the skillet. Blend together the tomato paste, tomatoes, water, bay leaf, oregano, and basil. Pour over the meat balls. Simmer about 1 hour, until sauce is thickened. Serve with cooked spaghetti.
