Stuffed Game Hen

INGREDIENTS:
6 game hens salt and pepper 1 cup wild rice
2-1/2 cups water 1 tsp salt 6 tbsp butter
4 strips bacon, diced 5 scallions, sliced 1/2 lb mushrooms, coarsely chopped
1 cup hazelnuts, chopped 1 tbsp butter



1 Season hens with salt and pepper. Wash wild rice, add water and salt and bring to a boil, reduce heat, simmer until water is absorbed. Melt the 6 tablespoons of butter in a skillet. In it, brown bacon and saute scallions and mushrooms. Combine with wild rice and hazelnuts.
2 Rub hens with the 1 tablespoon butter; stuff with stuffing. Roast at 350 F for 2 to 2-1/2 hours, basting frequently with butter and drippings.
