| 6 game hens | salt and pepper | 1 cup wild rice |
| 2-1/2 cups water | 1 tsp salt | 6 tbsp butter |
| 4 strips bacon, diced | 5 scallions, sliced | 1/2 lb mushrooms, coarsely chopped |
| 1 cup hazelnuts, chopped | 1 tbsp butter | |
| 1 | Season hens with salt and pepper. Wash wild rice, add water and salt and bring to a boil, reduce heat, simmer until water is absorbed. Melt the 6 tablespoons of butter in a skillet. In it, brown bacon and saute scallions and mushrooms. Combine with wild rice and hazelnuts. |
| 2 | Rub hens with the 1 tablespoon butter; stuff with stuffing. Roast at 350 F for 2 to 2-1/2 hours, basting frequently with butter and drippings. |
