Oklahoma City Chinese Pork Casserole

INGREDIENTS:
2/3 cup boiling water 2/3 cup rice 2 cups cooked pork, cubed
3 tbsp shortening 1/4 cup leftover pork gravy 1 cup sliced celery
1 cup chopped onions 1 (10-3/4-oz) can mushroom soup 2 tbsp soy sauce



1 Pour water over rice; let stand for 1 hour. Brown pork in melted shortening; add gravy. Place in 2-qt casserole; cover with celery, onions and rice. Combine soup and soy sauce; spoon over top. Bake, uncovered, in 350 F. oven for 45 minutes.
