Pan Fried Whole Trout

INGREDIENTS:
4 average trout (cleaned, of course) 1-1/2 cup macadamia nuts (chopped fine) 1 cup pitted prunes (chopped fine)
1 tablespoon sweet sherry 1-1/2 cup fresh breadcrumbs salt and pepper
1 lemon 1 teaspoon parsley (chopped) 1 teaspoon olive oil
toothpicks



1 Mix nuts, prunes, sherry and breadcrumbs togehter in bowl. Add salt and pepper to taste while mixing in parsley and dill. Mould mixture into cavity of trout (secure with toothpicks). Heat oil in medium in a large pan. Cook trout for 3-4 minutes on each side. Add a squeeze of lemon juice and a garnish with fresh chopped chives of dill.
