| INGREDIENTS: | ||
| 2 lbs boiled squash (2 1-lb cans may also be used) | 1 (2-oz) jar chopped pimento | 2 tbsp grated onion |
| 8-oz pkg of herb seasoned stuffing | 2 grated carrots | 1 can cream of chicken soup |
| 1 cup of sour cream | 1 stick margarine, melted | 1 cup chopped roasting peanuts |
| 1 | Combine vegetables. Blend undiluted soup and sour cream; stir into vegetable mixture. Toss together stuffing, chopped peanuts, and margarine. Pour half the stuffing in a shallow 3-qt. baking dish. Pour vegetable-sour cream mixture over layer. Top with remaining stuffing. Bake at 375 F. for 30 minutes. |
