Cromwell Peanutty Squash Supreme

INGREDIENTS:
2 lbs boiled squash (2 1-lb cans may also be used) 1 (2-oz) jar chopped pimento 2 tbsp grated onion
8-oz pkg of herb seasoned stuffing 2 grated carrots 1 can cream of chicken soup
1 cup of sour cream 1 stick margarine, melted 1 cup chopped roasting peanuts



1 Combine vegetables. Blend undiluted soup and sour cream; stir into vegetable mixture. Toss together stuffing, chopped peanuts, and margarine. Pour half the stuffing in a shallow 3-qt. baking dish. Pour vegetable-sour cream mixture over layer. Top with remaining stuffing. Bake at 375 F. for 30 minutes.
