| INGREDIENTS: | ||
| 3 tbsp peanut oil | 1 large onion, chopped | 2 cups chopped celery |
| 1 cup finely chopped peanuts | 3 cups cooked rice | 1 lb cottage cheese |
| 1 cup diced cooked carrots | 1/3 cup peanut butter | 4 eggs, beaten |

| 1 | Saute onion and celery in the oil. Add remaining ingrdients. Stir until mixture is smooth and well-blended. Pack mixture into a 9x5x3-in loaf pan that has been lined with foil and then heavily greased. Bake in a preheated moderate oven 375 F. for 1-1/4 hours. Unmold loaf onto a platter and carefully stip off foil. Slice. May be served with a white or mushroom sauce. |
